Smoking Briskets in our Cookshack Smoker

Today I want to talk a bit about one of my favorite things; brisket. No, I don't love it just because hubby gets to make the main dish (although that is a bonus!), I love it because of the taste. I can still remember the first time I had smoked brisket. I really thought that I had wasted many years prior by not partaking of this cowboy delicacy. My husband makes comments every once in a while that I married him for his smoker. Of course not. I wonder what gave him that idea?

When I met my husband he had owned his smoker for a couple of years and it was relatively brand spanking new. Now, many years later (14? I am too lazy to count back), it still works like a charm. (This isn't really a commercial but I want to say that they will last forever and a day with normal household use) There are tons of smokers out there and there are tons of sizes and methods of smoking. We happen to have an electric one. The point is, get one. I don't care which one but get yourself a smoker pdq. Your tastebuds won't be sorry! Here's a few pictures of smoking three briskets:

Meat is seasoned up (we only use salt, pepper and garlic powder):

All three beauties are placed in the smoker. The box in the bottom contains mesquite wood. We cover it with foil for easy cleanup. Below the foil is actually the top of the wood box which is really cute and looks like a rooftop of a house:

After 12 hours in the smoker (all we did was close the door and open it back up 12 hours later, that is my kind of cooking!), here is what we found:

And I thought I would show you each brisket so you could drool over your screen:

And I really thought you would like this one because we turned it upside down on the foil from the rack it had been on. Can you see the fat "icicles" pointing straight up? I thought that this was hilarious....

A smoked brisket is so delicious; it can be eaten plain right out of the smoker. Most people, however, like to put barbecue sauce on it or have on the side for dipping. My husband also likes to slice it up and make a sandwich out of it with a little Lea & Perrins on the meat.

For informational purposes only, this is the latest version of our smoker: Cookshack Smokette

Future posts will show off smoked chickens! Oh my, that makes the best chicken salad in the world!
